Our third vintage of cider is both refreshing and complexly flavored. More of an apple wine than what Americans think of as cider it is made in the Spanish style of very dry cider with an American twist of low level of carbonation. The aromas those of apple blossoms mixed with citrus over a background of yeasty earthiness. The mouthfeel is crisp and long lived with a pleasant cleansing by the carbonation. Due to the bottle conditioned carbonation technique there is a small amount of natural sediment.
