This cider is made from organically grown apples from Live Earth Farm in Watsonville, California. It is inspired by the ciders of Spain. Totally dry, it has great aromas of fruit and a touch of earthiness. It is slightly sparkling from a secondary fermentation in the bottle similar to a bottle conditioned ale. This creates a lively mouthfeel and enhances the fruit and mineral characters while providing contrast to the creaminess from the yeast still present. The finish is clean and crisp. As the result of the this secondary fermentation there is a small amount of sediment present in the bottle which is fine to drink! At 7.1% alcohol this cider is perfect anytime and a great accompaniment to many foods especially Spanish tapas!
